I finished my menu, shopped and have made or prepped 17 meals. Some of them are doubled so that would be about 3 or 4 more. I still have the stir frys to go and a few of the side dishes. What a lot of work. I don't know what would work in place of the egg whites for that recipe. Maybe the egg replacer but I think it is mainly for cakes cookies and pies etc. Maybe tofu? I am clueless about tofu so that may seem strange. I had the best tofu chip spread in the health food store the other day. but fATTENING! I have not done very well on my diet the last few days, shopping, nibbling on everything I am cooking! Tomorrow I vow to do better. Oh, yeah, I get on here at night after everyone is sleeping. My grandma had a stroke a few weeks ago. She is now in a nursing home. My mom spends almost all of her time there so I like to visit every day or at least every other day. The last few days have been too crazy but I am going tomorrow. Thanks for the good thoughts...they keep me going! PS, I will post a few of the recipes in a few days when things get calmed down here.
