Re Chiffonade --- I mainly use it for basil - but imagine you can use it for other items also. You would take several nice size basil leaves -- and stack them one atop the other. Then, from the long side, you would roll them up VERY tightly. And then slice into small thin rounds. When they (the rounds) unwind they form long strands. They look great on top of so many things .... and are so easy to do!
