From what I gather, the South is a veritable "hotbed of canning activity. One of our texts we teach canning out of is a book called "So Easy To Preserve," published by the Cooperative Extension Service/University of Georgia (if you want a copy, contact them)!

Here where I live, people look at you wierd and say "I remember my Grandma (Mom, great Grandma) doing that--I didn't know you could still do it!" What fun! I then proceed to tell them how easy it can be, etc. We're always trying to get more members to join!
