I just did a luau for 120+ and you will find it easy to serve pilaf/rice. It is cheap, goes a long ways and will keep warm a long time. Any salad is fine-just add shrimp or mandarin oranges for an island flair. Try a cole slaw with pineapple in it. You can BBQ pineapple (just put sugar and cinamon on it-good!). For appetizers you can purchase eggrolls and cut them up. Try steak on a skewer-freeze it first (use sirloin), then slice very thinly while still frozen. Marinate in any teriyaki sauce. Remember to soak the skewers for at least 3 hours prior in water so they don't burn on the grill. Try a fresh fruit salad or skewers of fruit. We did chicken ka bobs (chicken, peppers, pineapple, mushrooms, canned potatoes). I'm sure you'll have no problem coming up with your own "libations" to drink... Try to purchase "snow" ice to pour it over-turns it into slush and is very refreshing. You can decorate with tiki torches, use grass skirts around your tubs of drinks, etc. There is a site on the internet that gives you the Hawaiin name for each name that you could use for name tags. I got most of my ideas here at this site-just search further.
