PEACH DELIGHT
Preheat oven to 350 degrees F.
FIRST LAYER:
2 cups self rising flour
2 sticks (1 cup) butter or margarine (8 oz), room temperature
1 cup chopped pecans
In a mixing bowl, beat butter until creamy, add flour and mix well. Stir in pecans. Spread over bottom of a 13x9x2 inch baking dish.
Bake for 20 minutes or until brown. Cool completely on wire rack
SECOND LAYER:
1 (8 oz) pkg cream cheese, room temperature
1 (8 oz) container Cool Whip, thawed
2 1/2 cups confectioners' sugar
In a mixing bowl, beat cream cheese until creamy. Slowly mix in Cool Whip, then the sugar. Spread on top of cooled crust.
THIRD LAYER:
2 large cans sliced peaches, drained
Place peach slices on top of 2nd layer.
FOURTH LAYER:
4 tsp flour
1 cup sugar
4 tsp peach jello (dry)
1 cup water
In a small saucepan, mix flour, sugar and jello well. Stir in water and cook over medium heat until thick, stirring constantly. Remove from heat and let cool; pour over top of third layer.
Refrigerator overnight, or for several hours.
May be served with a dollop of whipped cream or Cool Whip with each serving.
