Newby with Xpress Redi Set Go
Misc.Carolyn, I agree! I've just purchased the Xpress Redi Set Go and honestly, I'm a little disappointed with recipe selections. Trying to watch what I eat, most recipes in the book include lots of cheese or breads, tortillas, biscuits, corn bread, etc. And I can't eat eggs 3 meals/day (well, I can but it gets old). Not many recipes on the internet, so I guess we need to wing it on our own.
I made inside out chicken parmesan tonight for dinner. Butterflied a chicken breast, seasoned with italian seasoning, salt, pepper, crushed red pepper, garlic. Added parmesan and mozzarella cheeses, and some chopped up pepperoni. Closed it and cooked it in the Xpress for 15 minutes. Heated marinara sauce in the microwave and put on the chicken when it was done. What I didn't like - so much juice from the chicken while cooking, almost ran out! Need a smaller breast next time. Also, I missed the flavor of the sauce cooking into the chicken - it was tasty but a little bland. I have to experiment a little more.
