Recipe(tried): Ginger Rice Pilaf (rice cooker)

GINGER RICE PILAF

adapted from a recipe originally posted by Jackie, MA...thank you Miss Jackie, this is awesome!!!(this is so good that my neighbours, who "hate!" ginger, asked for the recipe!)

3 cups Jasmine rice (these are the rice cooker measure "cups", I think they are actually 5 oz)
1 bunch chopped green onion, set aside a couple TBSP for garnish
2 or 3 Tbsp. grated fresh ginger
4 TBSP chopped fresh flat leaf parsley, for garnish (just on top after the rice is almost done, then mix in before serving)
chicken stock (up to the 3 cup marker in the machine)
1 Tbsp. butter

Place all ingredients, except 2 Tbsp chopped green onion and 4 Tbsp. chopped parsley, in the rice cooker. Set to cook (I use the regular, or longest cycle, in my fuzzy logic rice cooker/steamer. This gives me the best result.

Just before serving add the reserved green onion, and fluff rice with a fork.
