I just got my GT xpress 101 last week and so far I've had good success with egg recipes and sandwich recipes.
One I experimented with is a combination of canned chicken, ceasar salad dressing, and feta cheese. Just mix it together, stuff it in a pita, and xpress cook it for about 2-3 minutes. My husband went crazy over it.
I've also made omelettes which turned out great, and tuna melts in tortillas. I tried muffin mix, but I guess I didn't cook it long enough. The recipe in the book states 6-8 minutes. I waited the entire 8 minutes but it was still a little runny in the middle. Other than that, it has been a great little appliance.
