Non-Stick options
Misc.I don't have a clue as to why they suggest not to use a "non-stick" baking pan. I work as a pastry chef, and in the industry, we use mats called Silpats. I recently purchased one at Crate & Barrel for my home. It costs $20.00 and measures 16 1/2" x 11 3/4". These mats can be used over and over again for years with just a simple washing. It can be rolled up and stored with your baking sheets.
Parchement paper also works very well. It can be purchased in rolls (like waxed paper)and will provide a non-stick surface to your baking pans. If using it for something like cookies, it too, can be reused, at least a couple of times.
A third option is to mix together 2 ounces of bread flour with 1 pound of soft unsalted butter. The mixture is then brushed onto the pans. This mixture can be left at room temperature for up to one week. Refrigerate if kept longer than this, and bring back to room temp.(be sure to stir) before using. This is a quick and easy way to butter/flour any pan(s). Happy baking. joy.
