Always a P.S. with me, like I don't take up enough room already!

If you go w/the lower fat method (skinned chicken), be sure to use a non-stick roaster or brush your roasting pan with a light coating of olive oil before adding veggies. I find the oil applied thinly with a pastry brush works better than a spray.
