Hello Pauline - your menu intrigued me, and I went to find an old cookbook I've had - I was fortunate to receive many old cookbooks from my aunt, who enjoyed cooking as much as I do. The cookbook I found is from 1968 and lots of fun!
Here are the recipes labelled “Peruvian” in the
cookbook. I will be very happy to type the whole
recipe for any you are interested in - please just post
a message here requesting those you are interested
in.

Shrimp Soup with Corn (Chupe de Camarones) - a
‘chowder” style soup with shrimp, corn, potatoes,
peas, a bit of green chili, and milk.

Duck with Coriander Rice - Similar to a chicken and
rice casserole, with fresh coriander and peas added.

Pork in Orange and Lemon Sauce with Sweet
Potatoes (Cancho Adobado) - this recipe is in the
style of a stew, but the flavors could easily be
transferred to a pork loin or tenderloin marinade.

Ceviche - this cookbook highlighted a fish ceviche
as a Peruvian dish, though the recipe appears to be
the same as most creviche recipes I’ve seen.

Potatoes with Cheese, Chili and Peanut Sauce -
cooked potatoes topped with a saouce including the
above mentioned ingredients.
