I have used "instant read" thermometers, but my favorite is a "Polder"(the brand name) thermometer. A sensor is inserted into the meat in a conventional way and is attached by a wire to a small digital readout box. The temperature reads constantly aand can be preset to alarm when the meat reaches the desired temperature. It is exact. It costs about $30 but it is one of the best investments. I cook turkey breasts all the time and they come out juicy but done. I sometimes move the probe around after the temperature alarms and check the temperature in other parts of the meat. It also works as a timer.
