Melanie, I use a recipe for "Fried Chicken Coating" for both my chicken pieces AND my pork chops. We love it! Rather than do it in the oven, I fry the coated meat in the frypan, and then pour over a can of Campbell's cream of chicken or cream of mushroom soup, stirred through a can of water. This makes a yummy gravy. If you want the recipe, I can post it for you. Let me know.
