HERB RAITA
"Raita is an Indian condiment that soothes the tongue - a cooling blend of yogurt, cucumber and herbs."
1 cup plain lowfat yogurt
1 cup finely chopped cucumbers (do not peel)
1/4 cup chopped fresh mint, dill or cilantro
1/4 teaspoon salt
Combine all ingredients in a mixing bowl, cover and chill for 1 hour before serving.
Serve as a condiment to accompany spicy curried dishes.
Makes 2 servings
