re: Beans not cooking/being tough

My mom has been saying the same thing about pinto beans lately
and says Casserole brand are the only ones that have come out consistently but that she has a hard time finding them. I cooked a pot of boracho beans with pintos lately that seemed to never get tender also. I think it is either a weather/growing problem or storage. Supposedly waiting to put salt in until the end helps keep them from being tough but I've never noticed that it helps, plus your beans never taste right. Doesn't seem you can ever get them salty enough then. I think if you can't get them tender with a pressure cooker then it has to be the beans. I haven't had that problem with the kidney beans I've bought lately though.
