Red Onion Vinaigrette
1/2 small red onion peeled, cut in 1/2-inch pieces (about 1 ounce)
1 1/2 teaspoons Dijon-style mustard
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup white balsamic vinegar (or use a fruit flavored vinegar)
1/2 cup extra virgin olive oil
Place the red onion, mustard, sugar, salt, pepper, and vinegar in a food processor or blender; process until smooth. Add the oil and process until emulsified.
Keep vinaigrette in a covered container in the refrigerator until ready to use. If vinaigrette separates, stir with a whisk to emulsify.
Makes 7/8 cup
