Misc.Sorry, no, canning your own salsa recipe is not safe. There is no way to know the ph of that salsa recipe nor the density. Both are totally critical in safety of a recipe. Only recipes tested in a lab for safety should be canned. Never try to take a cooking recipe and turn it into a canning recipe.
Some things are just meant to be eaten fresh.
