re: canning your own recipes

Sorry, no, canning your own salsa recipe is not safe. There is no way to know the ph of that salsa recipe nor the density. Both are totally critical in safety of a recipe. Only recipes tested in a lab for safety should be canned. Never try to take a cooking recipe and turn it into a canning recipe.
Some things are just meant to be eaten fresh.
