STIR FRY VEGETABLES
1 cup fresh bok choy, cut at an angle
1 cup broccoli florets
1 cup julienne sliced onion
1/2 cup carrots, cut at an angle
1/2 cup julienne sliced red bell pepper
1/2 cup baby corn, drained
1/2 cup straw mushrooms
1/2 cup sliced bamboo shoots
1 cup chicken broth
1/2 tbsp cornstarch
2 tablespoons of peanut oil
1 tbsp chopped garlic
1 tbsp finely chopped ginger
FOR THE SEASONING:
1 tsp five spice powder
1 tbsp soy sauce
1/8 tsp salt
1/8 tsp ground white pepper
Mix bok choy, broccoli, onion, carrots and bell pepper, baby corn, mushrooms and bamboo shoots; set aside.
Mix chicken broth and cornstarch; set aside.
Cooking in a wok is key to preparation; be prepared to work quickly.
Heat wok on stove. Add 2 tablespoons of peanut oil and immediately add vegetable mixture, garlic and ginger. Stir quickly with a spoon or toss wok back and forth to mix vegetables. Season with 5 powder spice, soy sauce, salt and pepper. Cook vegetables until good and hot but still crisp.
Add chicken broth mixed with cornstarch and stir quickly until liquid thickens. Taste and adjust seasoning, if necessary.
Makes 8 servings
