Gregory,

I, myself, made a mid-life career change when I left accounting to become a chef. Always preferred food to numbers anyway, went to California Culinary School, and I've been improving my skills and income ever since. There is a book called Peterson's guide to Culinary Schools that is extremely useful for finding a school that might appeal to you. You might also try their website (http://www.petersons.com) and type in the keyword culinary, just for a start. Good luck!
