Dandelion greens ARE bitter! I don't have any good recipes for them because I find them inedible, too. (For that matter, I dislike endive and chicory because of their bitterness.)

Scientists have found that people discern bitterness differently: a small percentage of some people detect a chemical that makes bitter greens taste unpleasant to them, while most of the population finds the bitter taste refreshing.

In general, to lessen the bitterness of any greens, you can blanch them in boiling water, throwing away the first cooking water before using them in your recipe.

Hope someone else comes up with a better solution!
