re: egg cheese

I tried an egg cheese recipe that I got out of a pa dutch cook book, it was good but a little bland. I used my sieve with the paddle taken out of it to drain the cheese, just cover up the big hole left when you take out the screw in the bottom with tin foil. The recipe said you could flavor the cheese with chives or what ever but I didn't. It reminded me sort of like cream cheese. So I made cheese cake out of it. It was great!
