Re: Flank Steak and London Broil

Technically, there is no such cut as London Broil. It can be whatever you make it with. In our stores locally, they sell thick top round as London broil. One restaurant that I worked in used ends of Tenderloin (good!). Most food experts agree that it is flank steak, marinated and charbroiled, sliced thinly for service.
