Re: Flank Steak and London Broil

I've always considered flank steak a certain cut -- and I sure wish it would go on sale more often.

Many supermarkets sell other cuts of meats (part of the round, etc.) as London Broil. And they're often good.

I don't see why (in 98% of the cases) you could not not interchange the recipes for one cut for another. I know I (and others) do it with many other cuts. Check out a couple of good cookbooks with meat indexes at teh library.
