re: floating fruit in jam
Misc.It can be caused by too large of pieces of fruit.Sometimes it can help to let the cooked jam sit for 5 minutes, stir occasionally to distribute the fruit.
Or, if you gently move the jars over after they come out of the canner, waiting about 5 minutes or so, you can sometimes get it to mix. Some fruits, especially strawberry is known to float.
It happens to everyone at times.
