Glad I could help... I'll post some of my pasta/cheese recipes tonight for you- would you mind terribly sharing your cheese enchilada recipe with me? My husband says I'm Mexican food impared! Seems like I've tried at least 7 different recipes for enchiladas, and they all turn out mushy and watery. Thanks.
