Wish I had read this before now --- ugh!

I have done this and liked it very much. I've alwys kinda cooked with an eye for next time like 4 meat loaves instead of one, or 2 cassaroles instead of one so it was easy for me to make the transition.
some variations on this theme are:
One thing that i did was buy all the chikens I thought i would need fro cassaroles on sale and boiled them, cooled them and baged em in 1 cup (or whatever postions) servings and froze them. Then as I neede chicken for a recipe I had it but yet it was not already a "meal" lent to some variety & "inspiration"

I'd buy 10-20 lbs ground beef and place in my broiler pan and bake to let the grease drip to bottom pan (put in a slice of bread or cererly leaves to help absorb grease) again I would cool and bag accoring to my needs and freese.

with that in the frezzer there is always somthing easy to make for dinner! :)
