Jackie, I came across your question about cake mixes, and I have to admit, I was confused as to what you were asking, but then I realized what you were asking....so I asked my neighbor who happens to work in a great bakery.....she has been baking for many years, and told me that if a recipe calls for a "cake mix", then it has probably been tried and tested with a store bought cake mix, therefore, the ingredients by most chefs recipe requirements are based on the fact that you are using a store bought recipe, and usually all other ingredients are accounted for....however, she did caution that in the case where one has to be careful of the ingredients due to food allergies, etc....that perhaps you would want to experiment with the recipe leaving out or substituting the ingredients altogether....she cautioned that all cake mixes have hydrogenated oil, which is what our heart doctors tell us to stay away from because of cholesterol and calories.....but she said that if you are using a recipe that says to use a cake mix and to add so much of a certain ingredient, it is usually safe to assume that by leaving that ingredient out, you will probably be changing the texture or taste of the recipe and may not be happy with it......I hope I didn't confuse you further.....but I think I know what you are asking....I guess the reason why many people do not use the store bought mixes is due to the hydrogenated oil based ingredients......happy baking!
