Thank you for your reply (and I'm sorry it has taken me so long to reply ... I only just figured out how to tell if someone responded or not to my post--never mind that my husband services computers for a living. *I* am not so techinical :) )

Anyway ... let me see if I can clarify my need in a cake mix. The other day I made a recipe that called for a packaged cake mix as a crust. All it wanted me to add to the cake mix was 1 egg, and 1 stick of butter. My concern is, that if I had made my own cake mix recipe--with all the added shortening already in it--my oil/lard quantities would have been too much--it would be too greasy--since the author of the recipe was assuming I was using a packaged cake mix (which requires 1/4 cup of oil added at the time of mixing). I know there is *some* shortening/lard in the packages, because I have looked at the igredients list on the package, but it is not ALL that is needed--as I have to add 1/4 cup at the time of mixing. In every homemade cake mix I have found, you don't need to add ANY oil or shortening at the time of mixing. ALL the oil is already in the mix--which, as I explained, would have thrown my recipe off in the above scenario.

Does this make any further sense?
