I am having the same problem you are. In fact that is how I found your question. I was searching for a home made cake mix recipe. I want to be able to use cake mix doctor recipes, but without buying cake mixes will all those added preservatives and chemicals.

One of the things the cake mix doctor does is replaces the oil and shortening added to a mix with another ingredient. So I needed to find a mix recipe that doesn't automatically add all the shortening in the beginning.

Upon further thought I decided there is only one way to get a mix recipe with the proper amount of shortening so as no to mess up other non cake, or cake mix doctor recipes.

Go get a box of cake mix, and see how much oil or butter it requires you to add.

Find a good recipe for a mix, that come out to the same out of mix as is in your box. Now subtract the amount of added oil from the amount of shortening in the recipe.

I haven't experimented with this yet, so I don't know how it will work. But I though I would tell you so perhaps you can try it.
