Recipe: Slow Cooker Italian Shredded Beef Hoagies (crock pot)

SLOW COOKER ITALIAN SHREDDED BEEF HOAGIES

1 (2 lb) beef boneless arm roast, trimmed of fat
2 medium onions, sliced
1 (14 1/2 oz) can (Italian-seasoned diced tomatoes, undrained
1/4 cup tomato paste
FOR SERVING:
8 hoagie buns, toasted (optional)
2 cups shredded mozzarella cheese (8 oz)

If beef roast comes in netting or is tied, remove netting or strings.

In 4 to 5-quart slow cooker, place onions. Place beef on onions.

In small bowl, mix diced tomatoes and tomato paste; pour over beef.

Cover; cook on Low heat setting 8 to 10 hours.

Remove beef from cooker; place on cutting board. Use 2 forks to pull beef into shreds. Return beef to cooker.

TO SERVE:
Spoon about 1/2 cup of the hot beef mixture onto each bun. Top each with 1/4 cup cheese.

VARIATION:
Spoon the beef over hot pasta instead of buns and top with grated cheese for an Italian-style supper.

Makes 8 sandwiches
