In response to your dinner ideas, sometimes I find myself in the same dilemas, but what I have done for the last two months has really worked for me.

My husband and I are pasta eaters, and we are not particully fond of sauce from a jar, so about once a month I make homemade spagetti sauce from scratch (real tomatoes and all)and make homemade meatballs or sausage to it. And I make enough that I will get at least 5 to 6 dinners. I put enough into small tupperware containers and freeze it. Since we both work and commute, this works out great. I will take out a container in the morning and it's defrosted by time I get home. And then I can decide if we will have ravioli or some kind of pasta, or I'll make homemade calzone and use the sauce for dipping.

But since you don't like red meat, my mother-in-law uses boneless porkchops or cuts up slices of chicken and lets it simmer.
