Recipe(tried): Vegetarian Chili

Vegetarian Chili Serves 3 - 4

1 16 oz can drained pinto beans
1 16 oz can drained kidney beans
1 16 ox can recipe ready diced tomatoes
1 16 oz can tomato sauce
1/3 cup sliced ripe olives (optional - i never add these)
1 4 oz can sliced mushrooms, drained
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
1/3 cup shredded carrot
2 tbsp cooking oil
1-1/2 teaspoon salt (i never add this)
2 teaspoons chili powder
1/4 teaspoon ground pepper
1/2 teaspoon dry mustard
1 clove minced garlic
6 - 8 dashed tabasco sauce

In a medium saucepan, heat the oil. Saute onion, celery, green pepper until soft. Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
