Kelly- here's an easy one I did tonight

Chicken Pot Pie-I don't have an exact recipe so I will try to tell you how I prepared. First- crockpot is a must.
This morning before going to work I put 1 c. chopped onion, 1 c. chopped celery, 3 carrots chunked, 1/4 c. dried parsley, 2 bay leaves, 1 whole chicken, salt & pepper and water to fill crock to 3/4 full in the crockpot on high. When I got home at 5pm I had a pot of nicely seasoned broth and cooked chicken.
I removed the chicken and deboned.
Then I put half of broth in a pot added 1-2 c. frozen mixed veggies then thicken with a little cornstarch and water. In a casserole I placed chunks of chicken, poured thicken broth over and topped with a puff pastry( store bought- my mom uses biscuits for topping)then baked about 40 minutes. Add a salad-dinner.
And you have half a chicken and broth to make chicken and noodles, chicken and corn soup, a nice casserole with rice cooked in the broth, chicken salad...
