Need some help with menu plenning and easy recipe ideas.

I have a very active 6 month old baby and a four year old step-son. I am having an awful time trying to put dinner on the table. The baby is usually fussy during this time, and my four year old is pretty picky. However, he loves to cook! Any ideas on dinners I can make ahead of time during baby's nap, then pop in the oven? also, I end up buying alot of food at the store, then we all say "There is no food to eat in here" when looking through the kitchen. I really need some help planning menus- any good books on this topic? Also, we don't eat red meat. We are on a tight budget, after spending way too much money on eating out and fast food. Thanks so much!
