re: Lemon & vinegar usage in bread recepies

The use of lemon & vinegar in bread recepies is it helps the dough rise & acts as a presevative to preserve the bread for an extra day or two.

Adding a tablespoon of vinegar or lemon juice to bread machine recpies as part of the water volume won't hurt the bread.
