Milnot is evaporated milk that has had the naturally-occurring butterfat replaced with vegetable oil, thereby creating a low cholesterol and low saturated fat product. You should be able to use regular evaporated milk with good results. It will only matter if you desire a low-cholesterol cheesecake.
