re: moldy saurkraut

Misc.
If it is moldy, it may not be safe to eat. If it is soft, slippery in texture, or has a dark or pinkish cast, then it is spoiled. It is hard for me to say since I cannot see what it looks like. Does it smell musty or strong and yeasty? If so, it may not be good.
I know some scum on top is natural, but it should be removed as soon as possible.
It should have bubbled with fermentation. I know the temperature has a lot to do with making good sauerkraut.
Wish I could be more helpful, but it is hard not being able to see it.

How can I tell if my homemade sauerkraut is spoiled?
Off odors develop when there is spoilage in sauerkraut. Spoilage in sauerkraut is indicated by undesirable color, off odors, and soft texture. Do not use sauerkraut that shows any of these signs.
