Recipe: After-Dinner Peppermints

AFTER-DINNER PEPPERMINTS

3 1/2 cups powdered sugar
3 tbsp water
3 tbsp light corn syrup
1/8 to 1/4 tsp peppermint extract
2 to 3 drops any food coloring, if desired

In top of double boiler, combine powdered sugar, water and corn syrup. Cook over simmering water until sugar dissolves and mixture is smooth. (DO NOT ALLOW WATER TO BOIL)

Remove from heat; stir in peppermint extract and food coloring. Keep mixture over hot water, quickly drop by teaspoonfulls onto ungreased cookie sheet forming 3/4 inch patties. Let stand until firm.

Store in tightly covered container.

Makes 5 to 6 dozen candies.
