Bananas that aren't overripe just won't give you the same flavor in baked goods.
I saw a tip on America's Test Kitchen which I haven't tried as yet, but could work nicely. As you preheat your oven, set the bananas inside for about 15 minutes. The skins will turn black, the flesh will become soft, and the flavor and sugars will concentrate. It should certainly make better pulp for the recipe.
