Hi Ed :-) The sites I have found suggest 3 quarts of potato salad for 25 people - that's 12 cups or about 1/2 c. per serving. You might want to make more but I assume that there will be other things being served as sides besides potato salad. People won't be eating just potato salad. I do think that 5 or 6 pounds, certainly 10 lbs. of potatoes would be more than enough but I could be wrong.
