PARSLEY AND CHIVE BUTTER
2 tablespoons chopped parsley
1 tablespoon chopped chives
8 ounces butter, softened
Juice of 1 lemon
Salt and black pepper
Beat herbs into butter. Add lemon juice and seasoning. Mix until smooth.
Chill before serving. Shape in a mold if desired.
Store in a cool place, or freeze in an ice-cube tray for handy portions.
