Misc.A hotel pan is a commercial stainless steel pan. The average is 2 inches deep by 18 inches wide by 24 inches long. The reason my recipes say hotel pan is because I serve off of a buffet line in my facility.
If you use my recipes, don't get too hung up on the equipment. If you were to use them, just plate them, sauce and or garnish them like you would any other recipe you would normally do.
