Ritz Cracker Cinnamon Crunch Coffee Cake For Phyllis

RITZ CRACKER CINNAMON CRUNCH COFFEE CAKE

This is the one my mom made in the 70's. It's a moist cake with crunchy toping.

1 1/2 cups all purpose flour
2 1/2 tsp baking powder
1/4 tsp salt
1/3 cup shortening
3/4 cup granulated sugar
1 egg
1/2 tsp vanilla
3/4 cup milk
FOR THE TOPPING:
1 cup finely rolled RITZ Cracker crumbs
1/2 cup lightly packed brown sugar
1 tsp cinnamon
1/3 cup melted butter

Mix together flour, baking powder and salt; set aside.

Cream shortening and sugar. Beat in egg and vanilla. Stir in dry ingredients alternately with milk. Spread batter in a greased 9x9-inch baking pan.

Combine ingredients for topping. Sprinkle evenly over batter.

Bake at 350 degrees F for 40-45 minutes or until cake tests done with a toothpick.
