How about a nice light chicken salad? If they;re going to be eating later then
they won;t want TOO much food - you could do a huge bowl of salad leaves with
maybe cherry tomatoes and diced cucumbers, add in one chopped cooked chicken
breast per person and dress it all with a light vinaigrette dressing. Or you
can serve the dressing seperately in case people don;t want to take chances
with it dripping on gowns. LOTS of large napkins to spread over themselves too.

My mom used to add in white seedless grapes to her chicken salad and she used a
mayonnaise based dressing too. That was good!!
