Recipe: Roasted Red Pepper and Tuna Spread
Appetizers and SnacksROASTED RED PEPPER AND TUNA SPREAD
3 cups Mancinl Roasted Red Peppers, drained
2 cans (6 oz. each) tuna, drained
1 medium celery stalk, finely chopped
1/4 cup black olives, pitted and chopped
3 tbsp. olive oil
2 tbsp. lemon juice
2 tbsp. chopped fresh parsley
1 clove garlic, finely chopped
Salt and pepper, to taste
1 pkg. crackers (for serving)
Cut peppers into bite size pieces; set aside.
Mix tuna, celery, olives, olive oil, lemon juice, parsley and garlic. Season with salt and pepper.
Place a piece of roasted pepper on a cracker and top with tuna mixture.
