Soft Coolies

This is a real mystery. I used to make crisp cookies up until about five years ago and then suddenly, soft cookies. Not that I don`t like soft cookies but they are not good to store. They stick together and will crumble
When I say I tried everything, I mean EVERYTHING!!
I tried just shortening, just butter. Half shortening, half butter. More flour, less flour. Same with eggs and sugar. I tried different baking pans and different methods of cooling. Different oven temp. I still got soft cookies.
I tried a shortbread cookie that was guaranteed to turn out crisp. Well, guess what?
I am a profesional baker and this has me totaly stumped
