SWEET-SOUR PORK
2 1/2 cups pork shoulder, lean, 1-inch pieces (1 1/4 pounds)
2 tablespoons fat or oil
1 teaspoon garlic salt
1/8 teaspoon pepper
2 cups water
3 tablespoons cornstarch
1/3 cup vinegar
1 1/2 cups green bell pepper, 1-inch pieces
1/2 cup raisins
1/3 cup sugar
1/4 cup soy sauce
3 cups rice, cooked (about 1 cup uncooked) (for serving)
Brown meat in hot fat or oil.
Add garlic salt, pepper, and water. Cover and simmer about 1 hour until meat is tender.
Mix cornstarch with vinegar. Stir into meat with green pepper, raisins, sugar, and soy sauce. Cook, uncovered, until liquid is clear and thickened. Stir just enough to prevent sticking.
Serve on rice.
Makes 6 servings, 2/3 cup sauce and 1/2 cup rice each
