Soyarella

In the past, I have used several different cheese substitutes - mainly the kinds found in the health food store - Soyarella and the like. Some of them melt just like real cheese. If you don't want to use real cheese because of the lactose in it or the rennet, check the labels on the substitutes in the health food store. Some of them have lactose in some form and some of them have rennet. Some use vegan versions of rennet.

I have found the flavors of the Soyarella and the like to be pretty good.
