The ham's pushing it

Your hubby's right about all the preservatives, but eventually the bad bugs will find a home in your ham. Generally, you should finish leftovers within three days. By this late date, I'd say both of you have excellent immune systems.

What we do with leftover ham is chop it up, freeze the bits on a cookie sheet, then pack them into freezer bags or boxes. Then whenever the mood strikes for breakfast casserole, boiled veggies Southern style, split pea soup, fried rice, etc., we just grab a handful of ham out of the freezer. It's been very handy--saves time and money. Plus, if wrapped properly, those ham bits keep a long time in the freezer. I finished off frozen leftovers from last Christmas's ham just last month!
