Recipe: Potato Chip Chicken (using garlic and chicken breasts, baked)

1 bag (2 oz/60 g) potato chips (about 2 cups/500 mL), 1*
2 cloves garlic, 2
1 teaspoon paprika, 5 mL
2 tablespoons olive oil, 25 mL
6 skinless boneless chicken breasts (about 2 lbs/1 kg), 6
Preheat oven to 400 degrees F (200 degrees C). Line a 13x9-inch (3 L) shallow baking dish with parchment paper
In work bowl fitted with metal blade, process potato chips, garlic and paprika until finely ground, about 30 seconds. Transfer to a shallow dish.
Rub oil over chicken breasts. Dredge breasts in potato chip mixture. Arrange in a single layer in prepared baking dish. Discard any extra mixture.
Bake in preheated oven until chicken is no longer pink inside, 20 to 25 minutes.
*Make sure the potato chips are fresh. If they are stale you can crisp them up in a preheated 400 degrees F (200 degrees C) oven for 5 minutes before processing.
VARIATION:
Use flavored potato chips, such as barbecue.
